Got to Have it Banana Cake!

This is a dense banana cake that is always a hit!

Butter (softened)     1/2 cup

Brown Sugar          1/2 cup

3 Ripe Bananas

Egg                        2

Milk                      1/2 cup

Molasses               1/4 cup

Whip together for 1 minute

ADD:
Flour                     1 1/4 cup

Oatmeal (quick oats) 1/2 cup

Wheat Germ         1/4 cup

Ground Flax          1/4 cup

Hemp Hearts         1/4 cup

Baking Soda          1 tsp

Baking Powder      1 tsp


Mix all ingredients until wet.

Transfer to 9 x 13 inch greased pan

Bake for 30 min or until toothpick comes out clean.

When cooled out of oven top with yummy chocolate frosting!


ADDITIVES:
1 cup chocolate chips

1 cup walnuts



Add a Little Chocolate Cake!

Prepare a chocolate cake mix as directed on box.

ADD:
Ground Flax Seed                   1/4 cup

Hemp Hearts                           1/4 cup

Vanilla Extract                          1/2 tsp

CHOOSE:
3 ripe bananas mashed

or

3 cups grated zucchini

or

3 cups grated carrots

Mix your choice of vegetable into the prepared cake mix.  Stir.

Pour into 9 x 13 inch greased baking pan

Bake at 350 F for approx 25 min

Yummy Banana Loaf

Butter                                  1/2 cup

White Sugar                         1/2 cup

Brown Sugar                        1/2 cup

Eggs                                     2

Mashed very ripe bananas    3

All purpose flour                   1 3/4 cup

Ground flax                           1/4 cup

Hemp hearts                          1/4 cup

Molasses                               1/4 cup

Cinnamon                              1 tsp

Ginger                                    1/2 tsp

Baking soda                            1 tsp

Baking powder                        1/2 tsp

Salt                                          1 tsp


Cream butter and sugar together.  Beat in eggs until smooth, add bananas, molasses and blend.

Add next 9 dry ingredients to mixture and mix until moist.

Transfer to greased loaf pan.  Bake at 350 F for about 1 hour.

BANANA DATE LOAF:  add 1 cup of chopped and pitted dates

BANANA CHOCOLATE CHIP LOAF:  add 1 cup milk chocolate chips.

BANANA NUT LOAF: add 1 cup walnuts.

These boys know how to eat!

I'm forever baking for the Johnson boys... hence the J Crew title.  I try to sneak in good healthy nutrients into  baking and cooking without changing the flavor too much.  I also RARELY let them watch while I create and bake!  If they saw what went in they'd never eat it I'm sure!

I'm always creating something new so I thought I'd share!  Some of the recipes are so quick and easy but have that little tweak of "healthy" additive.  They'll never know!
